Pumpkin Loaf

Perfect to have either sweet or savoury! (GF, DF, RSF)

INGREDIENTS:
1 whole butternut pumpkin steamed
3 eggs whisked
100g olive oil
1.5 cups almond flour
1 cup buckwheat flour
1 tsp sea salt
3 TBSP pumpkin seeds (2 TBSP for mixture, 1 TBSP for topping)
1 tsp baking powder
1 tsp baking soda

METHOD:
Preheat oven to 180 degrees fan-forced and line a loaf pan with baking paper.
Steam pumpkin until soft and mash.
Add whisked eggs and olive oil to the pumpkin. Mix well.
Add almond flour, buckwheat flour, sea salt, pumpkin seeds, baking powder and baking soda. Mix well.
Transfer mixture to prepared loaf pan and top with 1 TBSP pumpkin seeds.
Bake for 50 minutes until golden.
Allow to cool completely before slicing.
